    I am allergic to Bell Peppers. Specifically Bell Peppers, not all peppers. What can I do to replace their flavor in dishes like this? I have subbed bell peppers most commonly for carrots which helps add color and texture but the flavor isn't really comparable. Anyone's suggestions are appreciated:)

    Listen I have to eat gluten free because of my dietary restrictions, and I use a lot of buckwheat, and tbh I would us a lot less if I could. It's GREAT in sweet things. Cakes, pancakes, french toast, pasteries. But in savory? Oh my god you can literally taste the desparate need for sugar. Eating couscous is different somehow, I still prefer the neutrality and versatility of jasmine or even brown rice, but couscous can be good in salads or as a side in a savory dish. But god buckwheat flour? That stuff without sugar is like... porridge without salt. It's just so desperate for that one, critical ingredient. Anyway the point of this rant is that I have no idea why you'd make hor's dourves with buckwheat instead of literally any other flour, and I'm curious if you've got tips on how to make a solid GF buckwheat dough that's good for savory foods! Obviously you agree that it needs a good bit a sugar, but I'm wondering what you'd substitute for the all-purpose flour, if you were going to go GF.

    I prefer to make Ziti with a combo of mozzarella, provolone, parmesan and (go with me here) sour cream. When the sour cream mixes with the provolone, it creates a strong, rich cheesy flavour than can't be achieved with using ricotta or cottage cheese.
