    So much hate in the comments OMG, what's wrong with you. I'm from Tavagnacco, the town they mention for the asparagus festival, so I may know a thing or two about Friuli. I know, this may be a little pretentious I get it, however their offer doesn't look very different from what you'd get in a high end restaurant in Italy. Tradition has never been an obstacle to innovation, in Italy as well, as long as you keep in mind the foundational rules of Italian cusine: highest quality ingredients, allow each taste to stand out, less (cooking, mixing, mashing) is more.
    And the thought of someone in Colorado tasting Schioppettino is thrilling

    naah nothing italian about the osmizza (you are talking about some branches hanged out on the mail box of small farmes so I assume that you are talking about this).. the osmizza or osmica was born during the time of Austria-Hungary (and some say during the period of Charlemagne, so well before Austria-Hungary) when the central government gave 8 days to farmers to sell their products free of taxes (osmica->osem slovene word for eight, the number). the last thing is about the area.. the north east of italy is big, you can find the "frasca" style "cousine" only in the province of Triest-Trieste-Trst and in some areas near the border with slovenija... just a heads up from someone that was born and raised in this area.
    and please, dont give the name "italian" to something that its clearly not

      i thought about it for a little while and I can say that some things are not completely correct but its a great start for a restaurant that is thousand miles away from here
      Friuli is different from Venezia Giulia even tho its the same region (different dialects, different cousine)
      for example: polenta and frico are the most iconic dishes if I think about Friuli; if I think about osmizzas comes up to mind prosciutto, wine and cheese; while in Trieste you will find dishes with italian, austrian, slovenian, istrian (crotia) roots because of its multiculturalism and its history

    People are commenting on how pretentious and fake this makes the restaurant seem clearly have never been there. It's some of the tastiest food I've ever eaten, and the service was second to none. Yes it's expensive, but it's not trying to compete with Arbys. Go when you're celebrating something special with someone special and you will not be dissapointed.

    I think the idea of the restaurant is good, although I imagine its pricing makes it mostly unattainable for people living nearby. I think Italian food is best left to true Italians, despite cooking a diluted recipe or two on my channel.

      I think the idea of "Only _insert race or region here_ can make their food" is the most obnoxious thing. If you study something closely, know exactly what you're dealing with and put your skills and soul into something ANYONE can cook ANYTHING and it may be even better than the "real" thing if you've done your homework correctely. I'm not saying this restaurant does as I've never been there but dismissing someones ability to cook a certain way just because they weren't born in the location it was founded is foolish.

      Expensive food samples don't fit well together in a REAL Italian restaurant.

      Yeah, that's why today i couldn't even stand up properly... cause I didn't eat much...
      Regardless, traditional italian cousine doesn't depend on the quantity of the food, if you go to an osteria or trattoria you expect abundant classic recipe, but if you go to a restaurant you'll find recipe created by the chef but still with classic italian philosophy (fresh ingredients, simple dish, ecc...) you just want to try the experience of eating those and not fill yourself, either way it's all traditional italian cousine!
      So the only way to judge a place is to enter in and eat.

      Because its what people are passionate about. Everybody has some hobby or passion that to somebody who doesn't get it seems absurd or a waste of time, like cars or video games. It might not be something you have a love for and that's perfectly fine, theirs nothing wrong with just enjoying wine for what it is and not being to worried about the details, but some people like those details. Both schools of though have merit.

      So why would you want to train your tongue to be able to distinguish where a wine is from? Why not just enjoy any half decent wine? Why put in effort to train yourself so that you have to pay more for wine cause you can't enjoy the normal ones anymore? It's a lose lose situation with getting into wines...

      I don't get how that's relevant. Wine pairing based on food is a thing. Different grapes and different regions producing different tasting wine is a fact. Not much more was said in the video. I don't get how having a dedicated wine guy who knows and understands wine is invalidated by the blind taste test studies.
