    You are right, Yukon Gold potatoes are my favorite for mashed potatoes because of the creamy texture! And I agree with peeling the skin, BUT I like to boil the potatoes whole with the skin. When I peel them and cube them, I tend to overcook them. If you cook them whole, it only takes 35-40 minutes. Heavy whipping cream is the way to go - anything else with the exception of milk, totally changes the taste of the mashed potatoes. However, if your butter is just room temperature and not melted, it will not create soupy texture when added together with the heavy whipping cream - this way you save yourself and extra mashing. Great tips and great video! Sticking to old school is the best!

    Most of the flavour of potato is in the skin - if you want smooth mash but want more flavour, add the skins to the cream whilst you warm it.

    Great recipe. I stream the potatoes & they have this nice yellow sheen to them. Egg yolk & a little butter infused with garlic & herb of choice.

    Cook a potato, regarless of whatever kind of potato, mash em, put a liter of cream, butter, salt, herbs and spices for taste. There, the creamiest mashed potato. Not rocket science.

    pretty solid tutorial, but the end result to me is still on the dry and thick heavy side, I would have added more full fat milk until super fluffy.
    Also a bit of freshly grinded black pepper wouldn't hurt...and no herbs/ spices, keep it simple. I think Chef John's method is the better one

    Instant potatoes. Extra butter and milk for creamy style.I love russets for homemade chunky style mashed potatoes with lots of butter and a lil warm milk. Lots of salt and pepper just not too much with lots of homemade gravy.
